I had the same problem as Kristen C., except that when I changed the printer back to postscript after setting the paper settings, they greyed out again! I have a field below "Printer" called "PPD" which was set to Device Independent. I had to change that field to my printer. FINALLY the paper settings stayed. This printed to a PS file and was converted correctly to a PDF.
